2 lb boneless, skinless chicken breast
3 bell peppers (deseeded and cut into chunks)
1 onion (cut into chunks)
2 cups mushrooms
1/3 cup water
1/3 cup vinegar
1/3 cup vegetable oil
5 garlic cloves (minced)
1 tsp thyme
1 tsp Italian seasoning
1 tsp poultry seasoning
1 tsp rosemary
1 tsp salt
1 tsp black pepper
Instructions
In a bowl, mix water, vinegar, vegetable oil, minced garlic, thyme, Italian seasoning, poultry seasoning, rosemary, salt, and black pepper to create the marinade.
Place the chicken in a large Ziploc bag and pour the marinade over it. Seal and refrigerate for at least 2 hours.
While marinating, chop bell peppers and onion into chunks; prepare mushrooms by ensuring they are suitable for skewering.
Soak wooden skewers in water for 30 minutes if using them. Assemble the skewers by alternating chicken and vegetables.
Preheat the grill to medium-high heat. Grill the kabobs for 15-20 minutes, turning occasionally until chicken is cooked through.
