  • 1 pound linguine (or any long pasta)
  • 1 pound jumbo shrimp (peeled and deveined)
  • 2 tablespoons extra-virgin olive oil
  • 1 pint cherry tomatoes (halved)
  • 1 tablespoon grated garlic
  • 6 tablespoons butter
  • 1 teaspoon crushed red pepper
  • 1 tablespoon fresh lemon juice
  • Fresh parsley for garnish
  • Grated Parmesan cheese for serving

Instructions

  1. Boil a large pot of salted water and cook the linguine until al dente, about 11 minutes. Reserve ½ cup pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat and sauté the shrimp until pink and opaque, about 3 minutes total. Remove from skillet.
  3. In the same skillet, add halved tomatoes, garlic, butter, crushed red pepper, and pasta water. Stir until the sauce thickens.
  4. Return shrimp to the skillet, mix well, and add to drained pasta. Toss with lemon juice and garnish with parsley and Parmesan before serving.
