  • 1 cup diced red bell pepper
  • 3/4 cup diced celery
  • 1/3 cup diced red onion
  • 4 hard-boiled eggs, diced
  • 1 cup roughly chopped matchstick carrots
  • 1/2 cup mayonnaise (full fat or avocado oil mayo)
  • 1/2 cup fat-free Greek yogurt (vanilla)
  • 1 Tablespoon red apple vinegar
  • 2 teaspoons spicy brown mustard
  • 3 teaspoons raw honey
  • 1 clove roasted garlic, smashed
  • 1 teaspoon fresh-cracked black pepper
  • 1 Tablespoon fresh parsley, minced

Instructions

  1. In a large mixing bowl, whisk together mayonnaise, Greek yogurt, red apple vinegar, spicy brown mustard, raw honey, smashed roasted garlic, and black pepper. Chill.
  2. Cook pasta according to package instructions in boiling salted water until al dente. Drain and cool for about 5 minutes.
  3. In the bowl with cooled pasta, add diced bell pepper, celery, onion, hard-boiled eggs, and carrots. Mix thoroughly.
  4. Gradually add chilled dressing until desired consistency is reached. Fold in minced parsley before serving.
