  • 4 oz cream cheese (room temperature)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons coconut extract
  • 1 (8 oz) can crushed pineapple (do not drain)
  • 1 1/2 cups sweetened shredded coconut (divided)

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat together the butter, cream cheese, and sugar until light and fluffy. Add eggs, vanilla extract, and coconut extract; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined. Fold in the crushed pineapple and 1 cup of shredded coconut.
  5. Pour the batter into the prepared loaf pan and sprinkle with remaining shredded coconut.
  6. Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool completely in the pan before slicing.
