  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 fresh pineapple, diced (reserving 0.5 cup for garnish)
  • 1 cup white rice
  • 0.5 cup coconut milk (optional, for cooking rice)
  • 0.25 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 0.5 teaspoon red chili flakes (optional)
  • 2 lime wedges
  • 0.25 cup cashews (optional)

Instructions

  1. Marinate chicken thighs in a mixture of soy sauce, rice vinegar, brown sugar, ginger, and garlic for at least 20 minutes.
  2. Cook white rice according to package instructions; optionally substitute some water with coconut milk.
  3. Sear marinated chicken in a large skillet until golden brown; remove.
