  • 1/2 cup plus 1 tablespoon extra-virgin olive oil
  • 2 tablespoons sweet paprika
  • 1 3/4 pounds chicken thighs (boneless skin on)
  • 3/4 cup Plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon crushed red pepper
  • Kosher salt
  • Pepper
  • Lemon wedges (for serving)

Instructions

  1. In a large bowl, whisk together 1/2 cup of olive oil and sweet paprika. Add the chicken pieces and toss to coat them evenly. Let stand at room temperature for 15 minutes to absorb flavors.
  2. In a small bowl, combine Plain Greek yogurt, mayonnaise, lemon juice, cayenne, and crushed red pepper. Add the remaining 1 tablespoon of olive oil. Season with salt and black pepper to taste, then mix well until smooth.
  3. Preheat your grill to moderate heat. Season the marinated chicken with additional salt and black pepper. Thread four pieces of chicken onto each skewer. Oil the grill grate lightly before placing the skewers on it. Grill the chicken kebabs, turning occasionally until golden brown and cooked through (about 10 minutes).
  4. Transfer the skewers to a serving platter. Serve warm with the prepared yogurt sauce and lemon wedges on the side for squeezing over kebabs.
