  • ½ cup dried cherries (roughly chopped)
  • 1 cup Dr. Pepper soda
  • 1 cup unsalted butter (room temperature)
  • ¼ cup cocoa powder
  • ½ cup boiling water
  • ½ cup buttermilk
  • 3 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 1⅓ cups granulated sugar
  • 1 teaspoon baking soda
  • 1½ teaspoons vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ½ teaspoon all spice
  • 4 cups Dr. Pepper soda (for frosting)
  • 1½ cups (3 sticks or 339g) butter (for frosting)
  • 1 teaspoon ground ginger (for frosting)
  • 2½ cups (312g) confectioners’ sugar (for frosting)
  • 1 teaspoon vanilla (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, cocoa powder, baking soda, nutmeg, ginger, and all spice.
  3. In another bowl, cream together the butter and sugar; add eggs one at a time and mix well.
  4. Stir in the buttermilk, vanilla extract, prunes, and cherries.
  5. Gradually incorporate the boiling water and Dr. Pepper until just mixed.
  6. Pour batter into a greased 9×13 inch baking pan and bake for about 34 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool before frosting with Dr. Pepper frosting.
