  • 1 cup jasmine rice
  • 2 cups halved tomatoes
  • 3 cups fresh spinach
  • 1 can chickpeas (drained)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 2 cloves garlic (minced)

Instructions

  1. Heat olive oil in a cast iron skillet over medium-high heat. Season chicken with oregano, salt, and red pepper flakes, then cook until browned on both sides (5-7 minutes each).
  2. Remove chicken and sauté minced garlic in the same skillet for about 30 seconds. Add tomatoes and cook for an additional 3 minutes.
  3. Stir in jasmine rice with 2 cups water or broth. Bring to a boil, reduce heat to low, and place chicken back on top.
