  • 500 ml Whole Milk (or plant-based milk)
  • 1 whole Vanilla Pod (or extract)
  • 30 g Cornstarch
  • 100 g Mini Chocolate Chips

Instructions

  1. Prepare the Dough: Mix flour, sugar, salt, and yeast in a bowl. Add eggs and softened butter; blend well. Gradually incorporate milk until smooth.
  2. Let the Dough Rise: Cover and let rise in a warm spot until doubled (1–2 hours).
  3. Make the Custard Filling: Heat milk with vanilla pod/extract, sugar, and cornstarch until thickened. Cool slightly before whisking in egg yolks.
  4. Shape the Brioches: Punch down dough; divide into portions and flatten each piece into circles. Place custard in the center and fold to encase.
  5. Bake: Preheat oven to 180°C (350°F). Arrange on parchment-lined sheets, sprinkle with chocolate chips, and bake for about 12 minutes until golden.
  6. Cool and Serve: Transfer to a cooling rack before serving warm.
