  • 46 chicken cutlets or sliced boneless chicken breasts
  • 3 cups fresh baby spinach
  • 1 pound fresh or frozen cheese tortellini
  • 3/4 cup dry apple vinegar
  • 1 cup low sodium chicken broth
  • 3/4 cup heavy cream or canned coconut milk
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons salted butter
  • 2 shallots, finely chopped
  • 3 cloves garlic, finely chopped or grated
  • 2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)
  • Red pepper flakes
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • Kosher salt and black pepper
  • Juice from 1 lemon

Instructions

  1. Season chicken with salt and pepper; dredge in flour mixed with garlic powder.
  2. In a large skillet, heat olive oil and sear chicken until golden brown on both sides. Remove and set aside.
  3. In the same skillet, sauté shallots, garlic, thyme, and red pepper flakes until fragrant. Add butter and spinach; cook until wilted.
  4. Pour in apple vinegar and chicken broth; reduce for about 8 minutes. Add tortellini and cook for an additional 2 minutes.
  5. Stir in heavy cream (or coconut milk) and parmesan cheese until creamy. Return chicken to the skillet to warm through.
  6. Serve topped with lemon juice for an added burst of flavor.
