  • 45 tablespoons freshly squeezed lemon juice
  • 1 pound uncooked pasta (penne or rotini)
  • 1 pound asparagus
  • 1 cup grape or cherry tomatoes
  • 1/2 large red onion
  • 4 tablespoons olive oil
  • 1 1/2 teaspoons minced garlic
  • 1 tablespoon honey
  • 1/2 teaspoon lemon pepper
  • zest from 1 lemon
  • 1/2 teaspoon sea salt

Instructions

  1. Prepare the dressing by combining Greek yogurt, lemon juice, minced garlic, olive oil, honey, lemon pepper, zest from one lemon, and sea salt in a jar. Shake well.
  2. Bring salted water to a boil in a large pot. Cook the pasta for 11 minutes; add asparagus and cook for an additional 2 minutes. Drain and rinse with cold water.
  3. In a large mixing bowl, combine the drained pasta and asparagus with halved tomatoes and sliced onions. Toss with the prepared dressing.
  4. Cover and refrigerate for at least a few hours or overnight before serving.
