  • 1 1/2 Tbsp ground coffee
  • 2 lbs Angus ground beef (85/15)
  • 2 Tbsp butter
  • 1/2 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1/2 cup ketchup
  • Brioche or pretzel buns
  • Green leaf or arugula lettuce
  • 1/2 Tbsp salt
  • 1/2 Tbsp paprika
  • 1/2 Tbsp brown sugar
  • 1/2 Tbsp pepper
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp garlic powder
  • 1/4 Tbsp ground coriander
  • 3 Tbsp brewed coffee
  • 1 1/2 Tbsp tomato paste
  • 1/4 cup apple cider vinegar
  • 2 1/2 Tbsp Worcestershire sauce
  • 1/4 cup brown sugar (packed)
  • 1 tsp ancho chile powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 slices cooked Turkey Bacon

Instructions

  1. In a mixing bowl, combine the coffee rub ingredients: ground coffee, salt, paprika, brown sugar, pepper, onion powder, garlic powder, and ground coriander.
  2. Melt butter in a skillet over medium heat; add diced onions and minced garlic. Sauté until softened.
  3. In a large bowl, mix Angus ground beef with sautéed onions and garlic. Add brewed coffee and half of the coffee rub; mix gently.
  4. Form into six patties and season both sides with remaining coffee rub.
  5. Grill or cook patties over medium-high heat for 5-7 minutes per side until desired doneness.
  6. While cooking, prepare topping sauce by combining ketchup, tomato paste, apple cider vinegar, brown sugar, ancho chile powder, salt, and pepper in a saucepan over medium heat.
  7. Assemble burgers on toasted buns with turkey bacon and fresh lettuce.
