  • 12 lbs boneless skinless chicken breasts
  • 4 garlic cloves, minced
  • 3 tbsp olive oil
  • 1/4 cup cilantro, chopped
  • 3 tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 avocados, diced
  • 1 tomato, diced
  • 1/2 red onion, chopped
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice

Instructions

  1. In a mixing bowl, combine minced garlic, olive oil, chopped cilantro, lime juice, cumin, paprika, salt, and pepper to create a marinade.
  2. Add chicken breasts to a Ziploc bag or bowl; coat evenly with marinade. Refrigerate for at least 1 hour.
  3. Preheat grill to medium heat. Grill chicken for about 6 minutes per side or until internal temperature reaches 165°F.
  4. While grilling, mix diced avocados, tomatoes, red onion, cilantro, and lime juice in a separate bowl for toppings.
  5. Serve grilled chicken topped with your desired mixture.
