  • 1 cup ripe peaches (peeled and diced)
  • 1/2 sweet onion (diced)
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • 1 jalapeno chile (seeded and minced)
  • 1 small poblano pepper (roasted and minced)
  • 2 chipotle chiles in adobo (seeded and minced)
  • 1 teaspoon adobo sauce
  • 1 garlic clove (minced)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon apple cider vinegar

Instructions

  1. Prepare all fresh produce by washing the tomatoes and peaches thoroughly. Peel and dice the peaches, chop the tomatoes and onion.
  2. In a mixing bowl, combine chopped tomatoes, diced peaches, onion, lime juice, cilantro, jalapeno, roasted poblano pepper, chipotles in adobo, garlic, sugar, salt, and apple cider vinegar.
  3. Stir gently until all ingredients are evenly mixed.
  4. Taste the salsa; adjust sweetness or heat if desired by adding more sugar or jalapeno.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
