  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste (about 1 teaspoon)
  • 1 teaspoon minced or grated garlic
  • 1 teaspoon hot sauce (such as Cholula)
  • 1 1/2 pounds boneless skinless chicken breasts (cut into about 1 1/41 1/2 inch chunks)
  • 23 red (yellow or orange) bell peppers (cut into about 1 inch pieces)
  • 1 red onion (cut into about 1 inch chunks)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, cilantro, chili powder, cumin, oregano, salt and pepper, garlic, and hot sauce in a mixing bowl.
  2. Marinate the chicken: Place chicken chunks in a freezer bag with the marinade. Seal the bag, massage to coat thoroughly, and refrigerate for 1-2 hours.
  3. Combine bell peppers and onion in a large bowl with olive oil, chili powder, cumin, salt, and pepper; toss until well-coated.
  4. Preheat your grill to 400°F. Thread marinated chicken pieces onto skewers alternately with bell peppers and onions.
  5. Grill skewers for about 5 minutes on one side before flipping them over; cook another 5-7 minutes until the chicken reaches an internal temperature of 165°F.
  6. Remove from heat and serve with garnishes like cilantro.
