  • 2/3 cup granulated sugar
  • 1 1/2 teaspoon all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups finely grated carrots
  • 2 oz cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 1/4 cups powdered sugar
  • 1/4 cup + 2 tablespoon sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. Prepare the cheesecake layer by mixing cream cheese and sugar until smooth; add flour, eggs, vanilla, and sour cream. Pour into the pan.
  3. In another bowl, whisk dry ingredients (flour, baking soda, baking powder, salt, cinnamon, nutmeg). Combine wet ingredients (canola oil, applesauce, sugars, eggs, vanilla). Mix both together and fold in grated carrots. Pour over cheesecake layer.
  4. Bake for about 60 minutes or until set; cool completely before removing from the pan.
