  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground all spice
  • 1 cup shredded carrots
  • 8 oz cream cheese
  • 1/2 cup butter for frosting
  • 1 cup powdered sugar
  • 1 tsp vanilla extract for frosting
  • 3/4 tsp ground cinnamon for frosting
  • 1/2 cup crushed pecans for topping
  • 1/4 cup shredded carrots for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. In a large mixing bowl, cream together softened butter and both sugars until fluffy. Add eggs one at a time, mixing well; stir in mashed bananas and vanilla.
  3. In another bowl, whisk together flour, baking soda, salt, and spices. Gradually mix dry ingredients into wet until just combined.
  4. Fold in shredded carrots gently and pour batter into prepared pans.
  5. Bake for about 35 minutes or until a toothpick comes out clean. Cool for ten minutes in pans before transferring to wire racks.
