  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter (melted)
  • 2 medium apples (peeled and thinly sliced)
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 500 g cream cheese (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan.
  2. In a saucepan over medium heat, melt butter. Add sliced apples, brown sugar, and cinnamon; sauté until tender (about 5–7 minutes). Set aside.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until smooth.
  4. Pour half of the cheesecake filling into the crust. Layer sautéed apples on top, followed by remaining cheesecake filling; smooth the top.
  5. Bake for about 60 minutes until set around edges but slightly jiggly in center. Turn off the oven and let it cool inside for an hour.
  6. Chill in the refrigerator for at least four hours or overnight.
  7. For caramel topping: In a saucepan over low heat, combine brown sugar, heavy cream, butter, and salt; stir until melted and smooth. Drizzle over chilled cheesecake before serving.
