  • 3 tbsp sugar
  • ⅔ cup all-purpose flour
  • ⅔ cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 5 tbsp melted salted butter
  • 24 ounces cream cheese, room temperature
  • 1 cup packed light brown sugar
  • 3 tbsp all-purpose flour
  • ½ tsp ground cinnamon
  • ¾ cup sour cream, room temperature
  • 5 tbsp fruit juice (as bourbon substitute)
  • 4 large eggs, room temperature
  • 3 ½ cups sliced and peeled peaches (about 4 peaches)
  • 2 tsp ground cinnamon
  • 2 tbsp loosely packed light brown sugar
  • ½ cup cold heavy whipping cream
  • ¼ cup powdered sugar
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract

Instructions

  1. 1. Preheat the oven to 350°F (175°C). For the crust, mix graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan and bake for 10 minutes.
  2. 2. For the streusel topping, combine flour, brown sugar, cinnamon, and melted butter until crumbly; bake until golden brown and set aside.
  3. 3. In a mixing bowl, blend cream cheese and brown sugar until smooth. Gradually add flour, cinnamon, sour cream, fruit juice, and eggs; mix gently to avoid overmixing.
  4. 4. Layer sliced peaches seasoned with cinnamon and brown sugar over the cooled crust before pouring the cheesecake filling on top. Sprinkle with streusel.
  5. 5. Bake using a water bath method until set but slightly jiggly in the center; cool gradually before serving.
