  • 3 1/2 cups powdered sugar
  • 1 cup fresh blackberries, reduced to 1/3 cup puree
  • 4 ounces cream cheese, room temperature
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra fresh blackberries (for garnish)
  • Edible flowers, optional (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round baking pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream together unsalted butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
  5. Mix buttermilk and lemon zest in another bowl; gradually add to creamed mixture on low speed.
  6. Incorporate dry ingredients until just combined; gently fold in fresh blackberries.
  7. Divide batter between prepared pans and bake for 30–32 minutes until a toothpick comes out clean.
  8. Cool cakes in pans for about 10 minutes before transferring to a cooling rack.
  9. For frosting, beat butter, cream cheese, powdered sugar, blackberry puree, vanilla extract, and salt until smooth.
