  • 1/3 cup light brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter – melted
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1/2 cup Greek yogurt
  • 1 1/2 cup fresh berries (about 1 cup blueberries and 1/2 cup raspberries)
  • 6 oz. cream cheese – room temperature
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk or cream

Instructions

  1. Preheat your oven to 425°F and line a cupcake pan with paper liners.
  2. In a bowl, combine flour, sugar, and salt for the streusel topping. Mix in melted butter until crumbly; set aside.
  3. For the cream cheese filling, blend softened cream cheese with sugar, corn starch, and vanilla until smooth.
  4. In a large bowl, mix dry ingredients: flour, baking powder, and salt.
  5. In another bowl, whisk together egg and granulated sugar until blended; add yogurt, vegetable oil, and vanilla.
  6. Combine wet ingredients into dry ingredients gently until just incorporated.
  7. Fold in blueberries and raspberries while reserving some for topping.
  8. Spoon batter into liners, add cream cheese filling in the center, top with remaining batter, then sprinkle streusel on top.
  9. Bake muffins at 350°F for 30–35 minutes until golden brown.
