  • 1 lb beef (flank steak, sirloin, or skirt steak), thinly sliced
  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, bell peppers, corn)
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • Salt and pepper, to taste
  • 2 green onions, chopped, for garnish

Instructions

  1. Season sliced beef with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Sear the beef for about 2-3 minutes on each side until browned; remove and set aside.
  2. In the same skillet, add the remaining oil and sauté diced onion for 2-3 minutes until softened. Add minced garlic and mixed vegetables; cook for another 2-3 minutes.
  3. Push veggies aside; add beaten eggs to scramble for about 1-2 minutes until fully cooked. Mix eggs with veggies.
  4. Add cold rice to the skillet; break up clumps and combine with egg mixture.
  5. Stir in soy sauce; cook for another 3-4 minutes until well-coated.
  6. Return beef to the skillet; heat through for an additional minute.
  7. Adjust seasoning if needed, garnish with green onions before serving hot.
