  • 1 tablespoon pine nuts
  • 1 garlic clove
  • 1/4 cup olive oil
  • 1/3 cup water
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/2 avocado
  • 9 oz hearts of palm noodles or zucchini noodles
  • 1 cup shredded chicken (optional)
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Prepare the pesto sauce by adding basil leaves, pine nuts, garlic, olive oil, water, lemon zest, salt, and avocado into a food processor. Blend until smooth and creamy.
  2. Cook the hearts of palm or zucchini noodles according to package directions or on the stovetop for about 1-2 minutes until warmed.
  3. Stir in the avocado pesto sauce until well combined. If using chicken, add it now and continue heating until warmed through.
