  • 12 Jumbo shrimp (About 1/2 pound, shells and tails removed, deveined)
  • 2 teaspoons Southwest Spice Blend
  • 1 Tablespoon neutral oil (canola or vegetable oil works well here)
  • 4 Tablespoons butter
  • 4 10-inch Flour tortillas
  • 1 Cup Muenster Cheese (shredded)
  • 1/2 cup Green Chile peppers (roasted, seeds and veins removed and chopped)
  • 2 Avocado (peeled and smashed)
  • 1/4 teaspoon Kosher Salt

Instructions

  1. Heat oil in a fry pan over medium-high heat. Season shrimp with Southwest spice blend and cook for 4 minutes total until pink and opaque. Remove from heat.
  2. Butter one side of each tortilla and smash avocados with salt on the unbuttered side.
  3. Assemble by adding cheese, shrimp, and green chiles on top of each tortilla.
  4. Cook in a non-stick skillet over medium heat until toasted and cheese is melted; fold in half.
  5. Cut into slices and serve hot.
