  • 2.5 oz achiote paste
  • 1/2 cup fresh squeezed orange juice
  • 3 tablespoons fresh squeezed lime juice
  • 3 tablespoons canola oil
  • 2 pounds boneless skinless chicken breasts
  • 2 medium red onions
  • 2 cloves garlic

Instructions

  1. In a mixing bowl, whisk together achiote paste, orange juice, lime juice, canola oil, salt, and garlic powder until well blended.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure all pieces are coated. Seal or cover and refrigerate for at least 30 minutes (up to overnight).
  3. Preheat your grill to medium-high heat (or heat a skillet over medium). Remove chicken from the marinade and let excess drip off.
  4. Grill the chicken for about 6-7 minutes per side or cook in the skillet until fully cooked (internal temperature of 165°F).
  5. Add sliced red onions and whole garlic cloves during the last few minutes of cooking.
  6. Serve hot with optional garnishes like fresh herbs.
