  • 12 oz bow-tie pasta (farfalle)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red apple vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • freshly ground black pepper (to taste)
  • 12 oz cherry or grape tomatoes (red and yellow) sliced in half
  • 2 medium cucumbers (quartered)
  • 1 medium red bell pepper (diced)
  • 1/3 cup red onion (chopped)
  • 1/3 cup pitted black olives (sliced)
  • 1/3 cup pitted green olives (sliced)
  • 4 oz crumbled feta cheese

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and cool slightly.
  2. In a mixing bowl, whisk together olive oil, lemon juice, red apple vinegar, Dijon mustard, minced garlic, oregano, salt, and black pepper.
  3. In a large bowl, combine cooked pasta with tomatoes, cucumbers, bell pepper, red onion, olives, and feta cheese. Pour dressing over the salad.
