Ingredients

Scale
  • 1 salmon fillet (120-150g)
  • 1 zucchini (spiralized or julienned)
  • 1 egg
  • 1 avocado (sliced)
  • 1 cup cherry tomatoes
  • Olive oil
  • Salt, pepper, chili flakes, parsley, and lemon juice

Instructions

  1. Cook the Salmon: Preheat oven to 375°F (190°C). Season the salmon with salt, pepper, and lemon juice. Bake for 12-15 minutes until cooked through. Flake into chunks.
  2. Sauté the Zoodles: In a skillet over medium heat, warm olive oil. Add zucchini noodles and sauté for 2-3 minutes with salt, chili flakes, and parsley until tender.
  3. Fry the Egg: In the same skillet or a separate one, fry an egg sunny-side up until the whites are set but yolk remains runny.
  4. Char Tomatoes: Lightly sauté or roast cherry tomatoes until slightly blistered.
  5. Assemble the Plate: On a serving plate, layer zoodles as a base. Top with flaked salmon, sunny-side-up egg, charred tomatoes, sliced avocado, and garnish with lemon wedges.
