  • 1 kg beef (chuck or stewing beef), cut into chunks
  • 3 red bell peppers, deseeded
  • 3 scotch bonnet peppers (adjust to taste)
  • 1 medium onion
  • 400 g canned tomatoes
  • 1 cup vegetable oil
  • 3 tsp chicken bouillon powder
  • 1 tsp salt

Instructions

  1. In a large pot, season the beef with salt, bouillon powder, and some chopped onions. Cover with water and boil until the beef is tender. Reserve the broth and set aside the cooked beef.
  2. Blend the red bell peppers, scotch bonnet peppers, canned tomatoes, and onion until smooth.
  3. Heat vegetable oil in the same pot over medium-high heat. Add the blended mixture and fry for 15–20 minutes until thickened.
  4. Combine the cooked beef and some reserved broth to achieve the desired consistency. Simmer uncovered for another 15–20 minutes.
  5. Adjust seasoning as needed and let rest before serving hot over rice or yams.
