  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Fresh parsley (to garnish)

Instructions

  1. In a large pot, heat the oil over medium heat. Sauté the diced onion for about 3 minutes until translucent, then add minced garlic, chopped celery, diced carrots, and potatoes along with spices. Sauté for an additional minute.
  2. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes until all vegetables are tender.
  3. Remove half of the soup and blend until smooth using an immersion blender or regular blender in batches.
  4. Return the blended soup back to the pot and stir in dairy-free cream. Adjust seasonings as needed and simmer for a few more minutes.
  5. Serve hot, garnished with fresh parsley.
