  • 1 green pepper (chopped)
  • 1 medium carrot (grated)
  • 56 medium tomatoes (diced) or 1 (20 oz) can
  • 4 cups cooked beans (mixed varieties like kidney, black, pinto)
  • 5 tbsp tomato paste
  • 2 cups vegetable broth or water
  • 2 tsp coconut sugar (or sub brown sugar)
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 12 hot red chili peppers
  • 2 tsp oil

Instructions

  1. In a large pot over medium heat, add oil. Sauté the onion and green pepper for about 5 minutes until softened. Add garlic and sauté for an additional 1-2 minutes.
  2. Mix in diced tomatoes and sauté until they break down (3-5 minutes).
  3. Stir in the remaining ingredients and bring to a simmer. Cook for about 30 minutes, stirring occasionally. Add more broth if needed.
  4. For a creamier texture, blend part of the chili using an immersion blender before serving.
  5. Serve hot with your choice of accompaniments.
