  • 8 Granny Smith apples
  • 2 tbsp butter
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • juice of ½ lemon
  • 2 ½ cups flour
  • 1 tsp salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • ¼ cup butter
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 1 tbsp cornstarch
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel and slice apples; mix with lemon juice, sugar, cinnamon, nutmeg, allspice, and salt.
  3. For the crust, combine flour and salt in a bowl; add diced cold butter until crumbly. Gradually mix in ice water to form dough.
  4. Roll out one dough disc into a pie dish and fill with apple mixture.
  5. Prepare the topping by melting butter in a saucepan, stirring in brown sugar and heavy cream until smooth. Add cornstarch until thickened; pour over apples.
  6. Roll out second dough disc, place over filling, seal edges, and cut slits for steam release.
  7. Bake for about 20 minutes or until crust is golden brown.
