  • 2 lbs ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, sauté the diced onion and green bell pepper until soft. Add minced garlic and cook for another minute.
  2. Add the ground beef (or turkey) and cook until browned. Drain excess fat if needed.
  3. Stir in diced tomatoes, tomato sauce, and beef broth until well combined.
  4. Add kidney beans and pinto beans along with chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper.
  5. Bring to a boil then reduce heat to low. Simmer uncovered for 30-45 minutes to let flavors meld.
  6. Serve hot with optional toppings like shredded cheese or avocado slices.
