  • 8 oz pasta (penne or rigatoni)
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Season chicken cutlets on both sides with salt and pepper. In a large skillet over medium-high heat, warm olive oil. Sear the chicken until golden and cooked through, about 3-4 minutes per side. Remove chicken to a plate and keep warm.
  2. Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta.
  3. In the same skillet, add more olive oil. Sauté minced garlic for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1-2 minutes.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan until melted and smooth. If the sauce is too thick, loosen it with a few tablespoons of reserved pasta water until desired consistency is reached. Taste and adjust seasoning with salt and pepper.
  5. Slice cooked chicken and add it back to the skillet along with drained pasta. Toss everything together to coat in the sauce. Serve immediately, garnished with extra Parmesan or chopped fresh basil if desired.
