  • 3 lbs goat meat
  • ½ cup green seasoning
  • 45 tbsp curry powder
  • 6 pimento seeds
  • 1/2 Scotch bonnet pepper
  • 2 medium potatoes (cubed)
  • ¼ cup onion
  • ¼ cup sweet pepper
  • Fresh thyme

Instructions

  1. Wash the goat meat in vinegar and water; rinse thoroughly.
  2. Season the meat with curry powder, green seasoning, adobo, jerk seasoning, black pepper, onion powder, cayenne pepper, and minced garlic.
  3. Marinate overnight in the fridge.
  4. In a heavy pot, sauté crushed garlic with a splash of water until bubbling; add curry powder and pimento seeds.
  5. Brown the marinated goat meat in the pot.
  6. Add water, chopped onions, sweet pepper, thyme, ginger, and Scotch bonnet pepper.
  7. Simmer covered for 2-3 hours; add cubed potatoes after two hours.
  8. Adjust seasoning as needed and cook until potatoes are soft.
