  • 1 medium yellow onion, chopped
  • 3 cloves garlic, chopped
  • 1 inch knob fresh ginger, peeled and grated
  • 1 tablespoon Thai red curry paste
  • 1/4 teaspoon red pepper flakes (plus more for garnish)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chopped cilantro (plus additional for topping)
  • 2 cups vegetable broth
  • 1 can (15 oz) coconut milk
  • Salt to taste

Instructions

  1. Heat coconut oil in a medium saucepan over medium heat until melted.
  2. Sauté the onion until softened and golden brown (about 8–10 minutes).
  3. Add garlic, ginger, red curry paste, and red pepper flakes; stir until fragrant (about 2 minutes).
  4. Stir in diced tomatoes, cilantro, and vegetable broth.
  5. Pour in all but 1/4 cup of coconut milk.
  6. Bring to a boil then reduce heat; let simmer for about 5 minutes.
  7. Blend until smooth using an immersion blender or transfer to a blender after cooling slightly.
  8. Serve topped with reserved cilantro, coconut milk, and extra red pepper flakes as desired.
