  • 70 g muscovado sugar
  • 1 egg
  • 250 g all-purpose flour
  • 250 g pecans (divided: 2/3 chopped, 1/3 whole)
  • 200 g maple syrup
  • 3 eggs (for filling)
  • Vanilla extract
  • Cornstarch

Instructions

  1. Begin by creaming together the softened butter and muscovado sugar until smooth. Mix in the egg and then gradually add in the flour until combined.
  2. Quickly form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 1 hour.
  3. Roll out the chilled dough to about 3 mm thick and fit it into a tart pan. Prick with a fork and freeze for an hour.
  4. Pre-bake the crust at 180°C (350°F) for about 20 minutes, removing baking beans halfway through.
  5. Toast the pecans in the oven for about 10 minutes until fragrant. Allow to cool.
  6. For the filling, cream together softened butter with muscovado sugar and cornstarch, then mix in eggs and vanilla extract.
  7. Stir in the chopped pecans before pouring into the pre-baked crust. Top with whole pecans and bake for an additional 30-40 minutes until set.
