  • 25 corn tortillas (medium size)
  • 2 ½ cups shredded beef
  • ½ cup mashed potatoes
  • 1 medium tomato (diced)
  • 1 small onion (chopped)
  • 1 jalapeno pepper (chopped)
  • Vegetable oil (for frying)
  • Pickled onions
  • Shredded lettuce
  • Mexican crema (or sour cream)
  • Queso fresco (or any cheese you prefer)

Instructions

  1. In a mixing bowl, combine the shredded beef, mashed potatoes, diced tomato, chopped onion, jalapeno pepper, ground cumin, salt, and pepper. Mix well.
  2. Take a corn tortilla and place a spoonful of filling in the center. Fold the tortilla in half to seal.
  3. In a skillet over medium heat, add enough vegetable oil to cover the bottom of the pan.
  4. Once hot, carefully place the tacos into the skillet and fry until golden brown and crispy on both sides (about 3-4 minutes each).
  5. Remove from oil and drain on paper towels.
  6. For the salsa, blend tomatoes, onion, garlic, oregano, cumin, vegetable oil, salt, and pepper until smooth.
  7. Serve tacos with salsa and desired toppings.
