  • 4 medium sweet potatoes
  • 2 balls of burrata cheese (about 6 oz each)
  • 1/2 cup toasted walnuts, roughly chopped
  • 1/2 cup fresh sage leaves
  • 1/4 cup pine nuts (or walnuts)
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes; rub with olive oil and season with salt and pepper.
  3. Roast on a baking tray for about 45 minutes or until tender.
  4. In a food processor, blend sage leaves, pine nuts (or walnuts), garlic, olive oil, lemon juice, salt, and pepper until smooth to make the pesto.
  5. Once roasted, cut open the sweet potatoes, fluff the insides with a fork, and fill with burrata cheese followed by sage pesto.
  6. Top with toasted walnuts before serving.
