  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 ½ pounds flank steak
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix spinach, ricotta cheese, mozzarella cheese, sun-dried tomatoes, Parmesan cheese, and minced garlic until well combined.
  3. Lay the flank steak on a cutting board and pound it to about 1/2 inch thickness using a meat mallet.
  4. Season both sides of the steak generously with salt and pepper.
  5. Spread the stuffing evenly over one side of the steak, leaving about an inch border.
  6. Roll the steak tightly around the filling and secure it with kitchen twine or toothpicks.
  7. Heat olive oil in an oven-safe skillet over medium-high heat and sear the steak on all sides until browned (about 2-3 minutes per side).
  8. Transfer the skillet to the oven and bake for 25-30 minutes or until it reaches an internal temperature of 145°F (63°C) for medium-rare.
