  • 1/3 cup granulated sugar
  • 1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, hulled and quartered
  • 1 large egg, beaten
  • 1 teaspoon water
  • 2 tablespoons sugar, for sprinkling
  • 2 tablespoons heavy cream
  • 3/4 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • Tiny pinch of salt (1/8 teaspoon or less)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, salt, baking powder, baking soda, and granulated sugar.
  3. Cut very cold butter into small cubes and incorporate it into the flour mixture until it resembles coarse meal.
  4. In a separate bowl, whisk together eggs, milk, and heavy cream; add to the flour mixture until just moistened.
  5. Gently fold in quartered strawberries using a rubber spatula.
  6. Turn dough onto a floured surface and shape it into an 8-inch circle; cut into wedges.
  7. Place wedges on the prepared baking sheet; brush with beaten egg wash and sprinkle with sugar.
  8. Bake for about 18 minutes until golden brown; cool slightly before serving.
