  • 1 tbsp. vegetable oil
  • 1/3 c. onion, finely chopped
  • Kosher salt
  • 2 cloves garlic, minced
  • 4 oz. cream cheese, softened
  • 2 eggs, divided
  • 1 (10-oz.) package frozen spinach, thawed and squeezed as dry as possible
  • 3/4 c. crumbled feta
  • 2 tbsp. fresh dill, chopped
  • 2 tsp. lemon zest
  • Freshly ground black pepper
  • Cooking spray
  • All-purpose flour, for rolling puff pastry
  • 1 sheet from 1 (17.3-oz) package puff pastry, thawed in the refrigerator

Instructions

  1. Preheat your oven to 400°F.
  2. In a skillet, heat vegetable oil over medium heat. Sauté chopped onion with salt until softened (4-5 minutes), then add minced garlic and cook until fragrant.
  3. In a mixing bowl, combine softened cream cheese with one egg, then mix in the cooled onion-garlic mixture, spinach, crumbled feta, dill, lemon zest, salt, and pepper until well blended.
  4. Roll out puff pastry on a floured surface and cut into squares. Press each square into greased muffin cups and fill with approximately 2½ tablespoons of filling.
  5. Fold the corners of the pastry over the filling and chill for 30 minutes.
  6. Brush tops with egg wash before baking for about 25 minutes until golden brown.
