  • 1 medium Spaghetti Squash
  • 1 tbsp Olive Oil
  • 2 cloves Garlic
  • 2 cups Fresh Spinach
  • 1 can Canned Artichokes
  • 4 oz Cream Cheese
  • 2 tbsp Mayonnaise
  • 1/2 cup Parmesan Cheese
  • 1/2 cup Mozzarella Cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil over cut sides and sprinkle with salt.
  3. Place the squash halves cut-side down on a baking sheet and roast for about 30-40 minutes or until tender.
  4. In a mixing bowl, combine garlic, spinach, artichokes (drained), cream cheese, mayonnaise, parmesan cheese, and mozzarella cheese. Mix well.
  5. Flip the cooked squash halves over and fill them generously with the creamy mixture. Top with additional parmesan cheese.
  6. Return stuffed squash to the oven and bake for an additional 25-30 minutes until golden and bubbly.
