  • 2 tablespoons soy sauce

  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets

  • 2 cups jasmine rice
  • 4 cups water

Instructions

  1. Rinse jasmine rice under cold water until clear. Combine rinsed rice, water, and a pinch of salt in a pot. Bring to boil, then reduce heat and simmer covered for about 15 minutes until absorbed. Let sit covered for another 5 minutes.
  2. While rice cooks, heat olive oil in a large skillet over medium heat. Sauté minced garlic for about 30 seconds until fragrant, then add bell peppers and broccoli. Stir-fry for 5-7 minutes until veggies are tender-crisp.
  3. Push veggies aside in the skillet and add ground beef to the cleared space. Cook until browned (about 5-7 minutes), then mix in soy sauce and chili paste.
  4. Serve hot rice topped with the spicy beef mixture and garlic veggies.
