  • 4 cups chicken broth
  • 1 (16 oz) package Velveeta cheese, cubed

  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook 1 lb penne pasta in 4 cups chicken broth according to package instructions; drain (reserve 1 cup broth).
  2. In a large skillet, heat 2 tbsp olive oil and 2 tbsp butter over medium-high heat. Add 1.5 lbs cubed chicken and seasonings (4 minced garlic cloves, 1 tbsp Cajun seasoning, 1 tsp smoked paprika, salt, and pepper). Cook until golden brown (6-8 minutes).
  3. Reduce heat and add drained penne to skillet with chicken. Stir in cubed Velveeta (16 oz), heavy cream (1 cup), shredded cheddar (1 cup), and grated Parmesan (½ cup). Mix until melted and smooth; adjust consistency with reserved broth as needed.
