  • 1 onion, diced
  • 1 bell pepper, diced (½ red and ½ green)
  • 4 cloves garlic
  • 3 roma tomatoes, finely diced
  • 1 bay leaf
  • 1 teaspoon paprika
  • Pinch of saffron threads
  • Salt and pepper to taste
  • 1/4 cup white apple vinegar
  • 4 boneless, skinless chicken thighs (cut into pieces)
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 cup frozen peas
  • 1/2 lb jumbo shrimp (peeled)
  • 8 oz calamari rings

Instructions

  1. In a large skillet or paella pan, heat olive oil over medium heat. Add onion, bell pepper, and garlic; sauté until translucent.
  2. Stir in chopped tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook for about 5 minutes before adding the white apple vinegar; cook for another 10 minutes.
  3. Incorporate chicken pieces and rice; mix well for about a minute.
  4. Gradually pour in the broth around the pan without stirring.
  5. Bring to a boil, then reduce heat to medium-low. Gently shake the pan occasionally during cooking.
  6. After about 15 minutes, nestle shrimp and calamari into the mixture along with peas; continue cooking uncovered until liquid is mostly absorbed (about 5 more minutes).
  7. Remove from heat and cover with a lid or foil for about 10 minutes before serving.
