  • 50g Granulated Sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter, at room temperature
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter, at room temperature
  • 225g Cream Cheese, at room temperature
  • 250g Powdered Sugar, sifted
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. In a mixing bowl, combine lukewarm milk and sugar. Sprinkle yeast over the top and let it sit until frothy (about 5-10 minutes).
  2. Add eggs and salt into the mixture. Gradually mix in flour until a soft dough forms.
  3. Knead in softened butter until smooth.
  4. Cover the bowl with a damp cloth and let it rise in a warm place until doubled in size (about 1 hour).
  5. In a saucepan over medium heat, melt unsalted butter for the apple filling.
  6. Add diced apples, sugar, ground cinnamon, kosher salt, and corn starch. Cook until apples are tender (about 5-7 minutes). Set aside to cool.
  7. Once dough has risen, punch it down gently on a floured surface.
  8. Roll out into a rectangle shape about 1/4 inch thick.
  9. Spread softened butter over rolled-out dough evenly.
  10. Sprinkle brown sugar mixture over buttered dough followed by cooled apple filling and pecans.
  11. Carefully roll up dough tightly from one end to another.
  12. Cut rolled dough into equal pieces (about 12).
  13. Place rolls on a parchment-lined baking sheet with space between them.
  14. Cover with plastic wrap and let them rise again for about 30 minutes.
  15. Preheat your oven to 350°F (175°C) while rolls rise.
  16. Bake for approximately 25-30 minutes or until golden brown.
  17. In a bowl using an electric mixer, beat together softened cream cheese and unsalted butter until smooth.
  18. Gradually mix in powdered sugar until fully combined; add heavy whipping cream to achieve desired consistency.
  19. Once baked rolls have cooled slightly, drizzle cream cheese frosting over top before serving warm!
