  • 1 tablespoon pumpkin pie spice
  • 1/4 tsp black pepper
  • 8 Tbs butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper in a bowl. Set aside.
  2. In a stand mixer, beat room temperature butter until creamy. Add brown sugar, molasses, and pumpkin puree; mix for about 2 minutes.
  3. Beat in the egg until fully combined.
  4. Gradually add dry ingredients to the wet mixture on low speed until just combined.
  5. Divide dough into two halves, wrap in plastic wrap, and chill for at least one hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll dough into balls (about 12 per batch) and coat lightly with sugar before placing them on the sheets.
  8. Press each ball down gently to about 1/4 to 1/2 inch thickness and bake for 12-14 minutes or until set on top.
  9. Cool on the sheets for five minutes before transferring them to a cooling rack.
