  • 2 lbs beef chuck or stew meat, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili flakes (optional)
  • Coconut milk

Instructions

  1. Cut the beef into bite-sized pieces and season with salt and pepper.
  2. Heat vegetable oil in a heavy-bottomed pot over medium-high heat. Sear the beef until browned on all sides; set aside.
  3. In the same pot, reduce heat to medium and sauté chopped onions until translucent. Add garlic and ginger, cooking until fragrant.
  4. Stir in curry powder, cumin, coriander, turmeric, and chili flakes (if using).
  5. Return seared beef to the pot, mix well, then add enough broth or water to cover the meat completely.
  6. Simmer on low heat for about 2 hours or until the beef is tender; stir occasionally and add liquid if needed.
  7. Towards the end of cooking, stir in coconut milk and heat through without boiling. Adjust seasoning if required before serving.
