  • 3 large sweet potatoes (peeled and cubed)
  • 1 onion (diced)
  • 34 garlic cloves (minced)
  • 2 cans diced tomatoes (15 oz. each)
  • 1 can tomato sauce (15 oz.)
  • 1 can pinto beans
  • 1 can black beans
  • 1 can kidney beans
  • 2 bell peppers (diced)
  • 1 T cumin
  • 2 T chili powder
  • 1 tsp smoked paprika (optional)
  • ¼½ tsp red chili flakes
  • ½ tsp pepper
  • ½1 tsp sea salt (more or less to taste)
  • c tomato paste (more to thicken as desired)

Instructions

  1. Combine all ingredients except tomato paste in the slow cooker. Stir well.
  2. Cook on high for 4-6 hours or low for 6-8 hours until sweet potatoes are tender.
  3. Once cooked, stir in tomato paste to thicken. Let sit for several minutes before serving.
  4. Serve with optional toppings like shredded cheese or avocado.
