  • 6 bone-in, skin-on chicken thighs
  • 2 pounds baby red potatoes, halved
  • 3 cups broccoli florets
  • ¼ cup white apple vinegar
  • ½ cup heavy cream
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 2 shallots, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken stock
  • 1 teaspoon dried thyme
  • 1 ½ tablespoons freshly squeezed lemon juice
  • 2 tablespoons unsalted butter

Instructions

  1. Season chicken thighs with smoked paprika, salt, and pepper.
  2. Sear chicken in a cast iron skillet over medium-high heat until golden brown on both sides.
  3. In your slow cooker, combine halved potatoes, white apple vinegar, chicken stock, shallots, garlic, and thyme; stir well.
  4. Place seared chicken on top of the potato mixture.
  5. Cover and cook on low for 5 to 6 hours until chicken reaches 165°F.
  6. About 30 minutes before cooking is complete, add broccoli florets.
  7. For the sauce, whisk together heavy cream, lemon juice, and cornstarch; pour into the slow cooker and cook on high for an additional 10 to 15 minutes until thickened.
  8. Serve hot.
